I love Hollandaise sauce although it really is high in calories. So as a healthier alternative, the avocado hollandaise is just perfect and I find it to be tastier than the usual hollandaise. And who doesn’t like avocados?
My eggs Benedict consists of a large black mushroom, chicken ‘bacon,’ soft poached egg and, of course, avocado hollandaise with some chilli flakes and fresh herbs. The perfect start to my day!! I love the creaminess of the yogurt and the zesty taste of the lemon. I also add the juice of half a lime for some extra zing but this is totally optional!!
This recipe is easy, quick and simple and is very versatile.
1 Ripe avocado
1/3 Garlic clove
1/2 C Plain yogurt
Few fresh parsley leaves
Juice of 1/2 lemon
2 Tbs Olive oil
Pinch cayenne pepper
How to do it
Combine all the ingredients except olive oil in a blender. Blend until well combined and smooth. Check the seasoning and add more salt if needed. Add the olive oil and blend well.
For a runnier consistency, add about 1/3 C hot water and mix well.
