Shakshuka… the perfect food!

For those of you who don’t me…I love tomatoes.  I love eggs.  I absolutely love garlic.  And the ‘no mess no fuss’ of a one pot meal is right up there with all of the above.  Thus, Shakshuka in my home comes as no surprise!  A beautiful combination of eggs, tomatoes Middle Eastern & North African spices, peppers and of course, garlic, this dish never fails to impress.  Whether you are cooking for one of many – this dish is really hard to mess up.
A rustic dish that pops with colour and bursts with flavour!  I try to keep this dish as authentic as possible, although I have added some of my own elements to it, such as a mixture of red and green pepper, parmesan shavings and guacamole to top.  I love serving this dish with fresh, toasted ciabatta, sour dough bread or warm tortillas.  And whatever sauce is left over, if any,  is a winner with hot dogs later if not soaked up by the crusty bread and devoured!

Ingredients (Serves 2-4)
2 Tbs Olive oil
1 Tbs Butter
1 Red Onion, finely chopped
3 Garlic cloves, finely chopped
1/4 Green pepper, blocks
1/4 Red pepper, blocks
1 Can chopped tomato or 6 ripe tomatoes, chopped
1/4 Cup fresh mint, roughly chopped
1/4 Cup fresh parsley, roughly chopped
1/4 Tsp Red pepper flakes (optional)
1/2 Tsp Ground cumin
1 Tsp Paprika
1 Tsp Ground coriander
1/4 Tsp Cayenne pepper
Salt
Black pepper
4 / 6 Eggs
Parmesan cheese, shaved
Lemon wedges

Heat oil & butter in a skillet and sauté onion & garlic until translucent.  Add peppers and sauté for a further 3 minutes.  Add the seasoning, red pepper flakes, cumin, paprika, coriander, cayenne, salt & pepper and sauté until fragrant, about 1 minute.  Add the chopped tomatoes and simmer until sauce is slightly thickened, about 5 minutes.
Make wells in the sauce and break eggs into the wells.  (I break the eggs into a cup first to avoid getting egg shells in my dish.  Make a well, add an egg, and repeat.) Place a lid on top and simmer on low until the egg whites are set.
Add the fresh mint & parsley and serve hot.
Serve with lemon wedges & a good dollop of guacamole!
